All food consists of two things:

- Micronutrients: Vitamins and minerals
Food that is processed or packaged alters the basic elements and those alterations can have detrimental effects on our health. Things such as hydrogenating oils, adding sugars and artificial sweeteners, applying toxic chemicals (such as pesticides), or trans fats. These all serve to make the food look better, appeal to our pleasure centers in our brains, or keep the food on the shelf longer, but when constantly used in our diet, they make us sick.
Food is also more than energy, for many of us it represents connection to our families, friends, culture, and celebration.
Science very clearly tells us that food has a powerful effect on our health. Beyond fueling our bodies, it contains many components that have important roles in the way our body functions. Poor food quality can create disease while high-quality food can reverse disease and create optimal health.
